If I don’t plan dinners ahead of time, then I’m scrambling to figure out something. Of course, as much as I try to plan occasionally I don’t get it done. These are a few sides I try to have the items on hand. They’re quick and easy additions to any dinner. These are 3 scrumptious side dishes my family enjoys very much and you can add to your arsenal of side dishes. I love cooking for my family, especially when they love and appreciate the food I make.

Roasted Brussel sprouts with Parmesan

1 lb. Brussel sprouts, trimmed and quartered

2 tbsp. olive oil

½ C. shredded Parmesan cheese

1 tsp. garlic powder

½ tsp. salt

¼ tsp. black pepper

Preheat oven to 400 degrees. Line baking sheet with foil and spray with non-stick spray. After quartering the Brussel sprouts, toss in a bowl. Add all ingredients and mix well. Pour onto the lined baking sheet. Bake approximately 20 minutes or until brussel sprouts have softened and browned. This recipe will make you fall in love with Brussel sprouts.

Loaded fluffy whipped potatoes

6-8 Idaho potatoes

½ C butter

½ C sour cream or fat free plain yogurt

1 C. milk

2 C. sharp cheddar cheese

2-3 oz. bacon bits (I use Hormel)

1/4 tsp. pepper

1/4 tsp. celery salt

1 tsp. onion powder

1 tsp. garlic powder

First, I cut the potatoes into small cubes, then boil for 20 minutes; then drain. After draining, add butter and milk and mix with mixer until smooth.  Add sour cream, cheese and bacon bits, mix well. To finish, add spices to your taste. YUM! Enjoy!

Garlic Parmesan asparagus

1 bunch thin asparagus, trimmed

2 tbsp. olive oil

2 tbsp. grated Parmesan

1 tsp. minced garlic

¼ tsp. pepper

¼ tsp. salt

Preheat oven to 400 degrees. The proper way to trim asparagus is to hold it by each end and bend; where it breaks is the best part of the veggie, discard the bottom pieces. It usually breaks a couple inches from the bottom. After trimming, lay across a foil-lined pan sprayed with non-stick spray, in a single layer. Drizzle with olive oil, then sprinkle with the rest of the ingredients and toss carefully. Make sure you bake in a single layer. About 15 minutes.

  1. Asparagus and brussel sprouts are some of the side dishes that we use (and tend to get some looks for). They pair perfectly with parmesan, so I’m sure that these recipes will really help somebody.

  2. I love the mix you used on the Brussel Sprouts and Asparagus for all kinds of vegetables!! Some of my favorite go-to items — parmesan, garlic and olive oil 🙂
