Chocolate chip toasted coconut cookies Click To TweetThe other day I decided I wanted to make chocolate chip toasted coconut cookies for my husband. I don’t really make sweets very often. Not that we are health nuts or anything. Far from it!
So I decided I wanted to make cookies but also wanted them to be a little healthier than the usual and I have to say they were the best cookies I’ve ever made! BTW I made 4 dozen but they only lasted about 5 days in our house. There were only two of us that week. So much for trying to make them healthier because it doesn’t work if you eat a dozen a day. Can you say counterproductive?!
As soon as I tried the first cookie I knew I had to write down this recipe. Oh and did I mention these were the best cookies I’ve ever made? Granted I don’t make cookies often, but you can judge for yourself. I will definitely be making these a family tradition!
Best cookie recipe:
1 12oz bag of chocolate chips
½ C applesauce
2 large beaten eggs
¾ C white sugar
¾ C packed brown sugar
2 tsp. vanilla
½ C canola oil
1 tsp. baking soda
1 tsp. salt
2 ¼ C coconut flour
¾ C toasted coconut; Save ½ for topping the cookies
Heat oven to 375 degrees, first I mixed together the oil, applesauce and sugars, next I added the beaten eggs and vanilla, then I added all the dry ingredients. After mixing well I added ½ the coconut and all the chocolate chips. Mix well. Spoon out onto cookie sheet, sprinkle remaining toasted coconut onto tops of each cookie and bake 10 minutes or until golden brown. Place cookies on cooling rack and repeat until you’ve made or eaten all the cookie dough.
I hope you enjoy these chocolate chip toasted coconut cookies as much as we obviously did. You probably shouldn’t eat them as quickly as we did though. 🙂
