Oh my, ya’ll. I’ve got a treat for you today…literally. If you’re like me then you know homemade baked goods just taste better. Fair warning though, this cake is so amazingly rich. We love its buttery, sweet flavor. Not much compares to this cake. It looks like a lot of ingredients but it’s a really easy cake to make. Believe me, it’s worth the effort. If you’re a chocoholic like my family then it’s perfect. If not so much, you could make it for a celebration or family dinner or anything so there aren’t any leftovers. But again let me warn you how addictive this easy Coca-cola cake is.

There are many versions of this cake. I’m not sure where my grandma got hers but it’s been in my family as long as I can remember. She made this cake for us oh so long ago and it still makes my mouth water when I think about it. That should tell you what an impression this cake will make. You know how when your mom or grandma would make something special to you, it’s burned in your memory, that’s this cake. I have a few other recipes that of my grandma’s that make me smile. And thankfully my husband and kids love them just as much. So I get to make them as often as I like.

You won’t believe how moist this cake. It sets up well and texture is perfect. It’s so easy you don’t even need your mixer. I only used my spatula. Since the marshmallows are light and airy they stay at the top of the cake. When it’s finished baking the top will be porous so when you pour the glaze over top it goes through the small holes and goes down a layer in the cake. So the delicious glaze, which is the sweetest part of the cake, is more than just on top. You can see in the picture below the top of the cake is darker than the bottom. That’s the yummy glaze sinking in. If you really want to push the envelope of sweetness you could serve it with vanilla ice-cream on top.

I can’t believe this but, I forgot buttermilk when I made my grocery store run. Did you know you can substitute regular milk and lemon juice? I had never heard of this substitute but I don’t use buttermilk much. I decided to try it instead of running back to the store. It worked so great. This recipe calls for ½ C. of buttermilk so you would use ½ C. milk and ½ Tbsp. lemon juice, mix and let it sit 5 minutes before using. I can’t even tell the difference in my recipe. But if you make a list like I should have done and actually get and use buttermilk, great. But if you’re like me, here’s your alternative. You won’t be able to tell the difference.

Easy Coca-Cola cake:

2 C. flour

3 Tbsp. baking soda

2 C. sugar

1 C. butter

1 tsp. vanilla

2 eggs (beaten)

1 C. coke

½ C. buttermilk

3 Tbsp. cocoa

1 ½ C. mini marshmallows

Preheat oven to 350 degrees. To make this cake, mix flour and sugar in a large bowl. Then heat coke, butter, vanilla and cocoa in saucepan until butter melts. Then pour over flour mixture and mix well. Now add buttermilk, eggs, baking soda and marshmallows. Mix well. This is not your traditional cake so don’t panic when it seems runny. It’s supposed to; it will firm up when baked. Bake at 350 degrees for 30-35 minutes in a greased and floured 9X13 pan. Don’t over bake. Toothpick will come out clean.

Easy Glaze:

½ C. butter

6 Tbsp. coke

1 lb. powdered sugar

3 Tbsp. cocoa

½ C. chopped nuts (optional)

Make this amazing glaze when the cake is almost finished. Put the powdered sugar in a medium sized bowl. Then in a saucepan slowly bring to a boil the butter, coke and cocoa. Pour over the powdered sugar, mix well. Then immediately pour over the cake, while the cake is still HOT, right out of the oven! Then you can top with chopped nuts if you want.

  1. I never thought to use Coke in baking! So interesting. And yes, I make my own buttermilk too, especially if I know I’d only need a cup or so (I hate that they only come in big cartons!)

    1. I have a couple recipes that use soda. You can use 1 C. diet coke and chocolate cake mix or diet 7up and yellow cake mix for a moist cake with less calories. I’ve also heard of meat marinades with soda. Soda pop has multiple uses.
