With summer around the corner, I’m getting excited about grilling. I’ve missed it the last couple of months, what with all the Minnesota snow and crazy weather. So needless to say I’m am extremely ready for warmer weather! Easy and Healthy Summer Grilling is perfect because the food tastes so great and mix that with easy clean-up. Does it get any better??? Today I’m going to share a couple of our favorite grill recipes. If these are quick enough for you, check out my 10 minute dinner ideas.
This first one Italian Chicken Pouch is wonderful because no matter how many you’re cooking for, each person gets their own pouch of yummy food. This is so easy and clean-up is even easier. Who doesn’t love that?! This would be a perfect meal planned out ahead of time for a busy weeknight. You could have it all prepped so that when you get home all you have to do is throw it on the grill for 20 minutes or so and done!
4 boneless chicken breasts
1 red or yellow bell pepper cut into 4 wedges
4 Roma tomatoes cut in half
1 small red onion cut into 8 wedges
½ C. Italian dressing
You need 4 pieces of foil or as many pouches as you intend to make. The pieces of foil need to be approximately 18 inches long. Now put 1 chicken breast, 1 bell pepper wedge, 2 onion wedges and 2 tomato wedges in the middle of each piece of foil. Then top with 2 Tbsp. dressing over chicken and veggies. Fold foil over so the edges meet. Then seal the edges by folding a tight ½” fold on all three sides, allowing some space for expansion and circulation. Grill the pouches over medium heat for 20 minutes or until chicken is no longer pink in the middle. If you have time, marinating the chicken beforehand will give it more flavors.
The second recipe is Beer Can Chicken. Who doesn’t love a moist whole chicken? This is a classic because it’s so easy and again quick clean-up. For this one though you may want to place a drip pan under the chicken so you don’t have to clean the drippings later.
4 lb. chicken
1 can beer
Rub for the chicken:
½ tsp. garlic powder
1 Tbsp. paprika
½ tsp. onion powder
2 tsp. salt
½ tsp. pepper
Mix all the rub ingredients together and with the chicken laying down rub ½ the rub mixture on the outside of the chicken and under the skin, rub the other half inside the cavity. Pour ½ the beer into the chicken while holding chicken upright, then insert beer into cavity. If you have one, insert a meat thermometer in the thickest part of the thigh but do not let it touch the bone. Then grill chicken upright over drip pan over medium heat for 1 hour 20 minutes or thermometer reads 180 degrees. Finally let the chicken stand 15 minutes before carving and discard beer can.
The third recipe is another quick grilling specialty. This Rosemary Lemon Shrimp with Squash and Zucchini is so flavorful and of course easy to clean-up. Are you seeing a pattern here? I love easy recipes!
1 lb. uncooked fresh or frozen shrimp
2 medium zucchini cut into 1 inch slices
2 medium squash cut into 1 inch slices
1 small red or yellow bell pepper cut into 1 inch slices
1 small lemon cut into wedges
Marinade for shrimp:
2 Tbsp. honey
1 tsp. lemon zest
¼ C. lemon juice
½ tsp. dried rosemary leaves
Mix all the marinade ingredients in a gallon baggie for easy clean-up and then add shrimp, zucchini, squash and bell pepper to bag. Seal, refrigerate and marinate for about 30 minutes, then remove shrimp and veggies from bag and discard. Grill shrimp and veggies in a grill basket over medium heat for 12-15 minutes or until veggies are tender and shrimp are pink and firm, then serve with lemon wedges. Makes 4 servings.
