We all grow up remembering something our mothers or grandmothers cooked that was special to us that is close to our heart. Something that makes our mouth water just thinking about it. Enjoy our family’s favorite; El Dorado Beef Casserole. Growing up my grandmother, then my mother and now me and someday my daughters, make this awesome Tex-mex type of recipe. It’s obviously a family tradition. One of my brothers even makes it for our family Christmas dinner on the years it’s his turn to host. He loves this stuff! I think my grandmother found it in a magazine many, many, many years ago and she was the queen of cooking and our family dinners. We loved going to her house for family dinners. Unfortunately, the inevitable happened and our family got too big to fit in her small home. As tends to happen as families grow our dinners became farther and farther in between. But I’m grateful to her for passing along her recipes. I think of her often but especially when I cook her favorite meals for my family. This is my way of remembering her and passing on her legacy.

Whenever I introduce this meal to a new person, they are always love it and are surprised what’s in it.

1 1/2 lb. ground beef

2-8 oz. can of tomato sauce

2 small cans sliced olives

1 pint sour cream

1 pint low fat cottage cheese

1-4 oz. can diced green chilies

1 lb. Monterey jack cheese

10 oz. bag of tortilla chips


 

To start we’re going to make each layer then put them together. So first cook and drain the beef. Then add the tomato sauce and drained olives. Also in a bowl, mix sour cream, cottage cheese and green chilies, set aside. Crush chips in the bag. Grate cheese, set aside. Next layer in a 9X13 pan in order, ½ crushed chips, then ½ beef mixture, next is ½ of the creamy mixture and lastly ½ jack cheese. Next you will layer in same order with the remaining mixtures. These two layers will fill your pan to the top. Cover in foil and bake at 350 degrees for 15-20 minutes. Finally remove foil and bake another 10 minutes.

    • Thank you very much for your kind words. I actually don’t get any spam comments. I’m not sure if that’s bc of the plugins I use or if I just don’t get enough comments. I use a wordpress blog with the Lifestyle theme. I have done everything myself and it has been a lot of work, but worth it. I’ve only used plugins recommended to me. I watch a lot of youtube videos to help me. Hope this helps you too. 🙂
