Here’s another sweet treat for you all to enjoy. We’ve been making these super easy no bake chocolate cookies in my family since I was a child and it brings back so many memories. I remember always asking for these cookies and getting so excited when my mom would agree to make them. When I became a teen and was able to make them myself, I would make sure we always had the ingredients in the house and made them as much as my mom would let me. And now my kids do the same thing.
If we want to make cookies, then this is definitely our go-to recipe. I know there are tons of “no bake” recipes out there. They all seem to vary slightly, but they’re basically the same. This cookie recipe is for chocolate lovers everywhere and it’s the best super easy no bake chocolate cookies ever in my opinion.
Are you ever watching tv and think, “Wow I really want some chocolate cookies?” This is recipe is perfect and you can’t beat these easy, quick and simple cookies that you almost always have the ingredients for. They are all kitchen staples and can be made in just a few minutes. The longest part of the process is waiting for them to cool and harden. Sometimes when I’m feeling especially impatient, I’ll put the wax paper on a cookie sheet and throw them in the fridge for a bit to speed up the process. Usually if I’m in the mood to make cookies I want them now. Who wants to make them, bake them and wait for them to cool?! These are faster and tastier. They’re so delicious that they become addictive and almost impossible to eat just one.
2 C. sugar
½ C. butter
3 Tbsp. cocoa
½ C. milk
1 tsp. vanilla
4 Tbsp. peanut butter
3 ¼ C. quick oatmeal
In a saucepan, bring to a boil the sugar, butter, cocoa and milk while mixing. After it gets to a rolling boil, let it boil for 1 ½ minutes while stirring constantly. Then add vanilla, peanut butter and quick oats and stir thoroughly. Drop by the spoonful onto parchment (wax) paper, let cool and harden. My mouth is watering just thinking about making these delicious super easy no bake chocolate cookies. It’s something about boiling the sugar and cocoa that kind of crystallizes them making these cookies almost melt in your mouth.
Depending on the size of the spoonful you drop will depend on how many cookies you get. Sometimes I end up making them a little larger and I get 24 but sometimes I drop smaller ones and I get 30 cookies. Either way, I get wonderful super easy no bake chocolate cookies that don’t last long in our house.
